It's a little known secret, but the very best place to eat fresh fish in Avignon is at the market itself.

Step 1: choose your fish at the market:

Step 2: turn around, take two steps, hand fish to the chef at the bistro

Step 3: enjoy a glass of wine while you wait

Step 4: watch the master at work

Step 5: voilà !

Step 6: buy fresh strawberries, and lemon and pistachio éclairs from the pâtisserie
